There's nothing quite like a BBQ chicken sandwich in the summertime.
Enjoy a lighter version of this classic meal, which includes a wonderful tart blackberry-infused sauce and is served on whole grain bread.
Sauce ingredients: ½ cup blackberries, ¼ chopped onion, ¼ cup ketchup, 2 tablespoons apple cider vinegar, 1 tablespoon honey, and 1 teaspoon Dijon mustard.
Sandwich ingredients include 4 boneless, skinless, trimmed chicken breasts, 4 whole grain burger buns, optional lettuce leaves, and sliced tomato.
Directions:
Blend the sauce components in a food processor for 30 seconds.
Spray the skillet with cooking spray and place it over medium-high heat. Cook chicken for 2-3 minutes on each side.
Using a fork, shred the chicken into thick pieces and return to the skillet. Stir in the sauce and simmer for an additional 1 to 2 minutes.
Divide the chicken among four buns, then top with lettuce and tomatoes (if using).
