Best mango coconut chia pudding (20-minute recipe)

Featuring my Creamy Coconut Chia Pudding, pureed mango, and toasted coconut, this Mango Coconut Chia Pudding is a quick and simple dish with just six ingredients.  

This is one of my favorite recipes for meal-prepping into a nutritious, flavorful, tropical breakfast—it thickens in only 20 minutes!    

The breakfasts I had in the Bahamas with my family served me inspiration for this recipe. It was the ideal way to start the day—light, wholesome, and revitalizing!    

I've been testing since coming home, and I think I've finally hit the ideal consistency for my thick and creamy chia pudding.   

(I hear too often that recipes for chia pudding are too thin!) After 20 minutes, this one is perfectly thick, and it will get slightly thicker while you wait.

A traditional combo that seems so pleasant and tropical is mango and coconut. (My 2-year-old son and my spouse both adore it!)
