Lemon Butter Wild Turkey Breast

Ingredients: 1 turkey breast, 1 Tbsp butter, 1 Tbsp olive oil, ½ lemon juiced, ½ cup chicken stock, 1 tsp cornstarch, 1 cup fresh spinach (optional), 2 Tbsp chopped fresh parsley, and 2 Tbsp capers.

Combine the marinade ingredients in a sealable bag or plastic container. Add the turkey and toss to coat.

Directions:  

Place in the refrigerator overnight or for approximately 12 hours.

Remove the silver skin from the tender and breast meats. Cut turkey into 1- to 1-1/2-inch chunks. Add to the marinade.

In a large frying pan, combine the butter and olive oil over medium heat. Then, add the lemon juice. Heat until it begins to boil.   

Add the turkey chunks to the pan, spacing them out to cook quickly and evenly, flipping once every two minutes. Cook for another two minutes.

Combine the chicken broth and cornstarch, then slowly add it to the turkey. Bring the pan to a simmer and let the contents thicken.

Add the spinach and simmer for one minute, or until wilted.Top the turkey with capers and parsley and serve hot.
